Our Story

In early 2000, Deann Thiry Schoeler, founder of Sunny Valley Wheat Free, became aware that a friend had Celiac Disease. Wanting to make something for her, she bought a gluten-free cookbook and the journey began. After some trial and error, she was able to create delicious gluten-free breads, pastas, pastries and other treats.

After receiving positive feedback from her friend as well as non-Celiac friends and family members, she felt confident enough to market her products to a local natural food store. The products sold quickly enough for her to realize that there was a big demand and very little supply of freshly made gluten-free products. Soon, she found a location to set up a 100% dedicated gluten-free facility. Sunny Valley Wheat Free began their retail operation on June 20, 2006.

About Our Products

Consumers with restrictions, such as those with Celiac Disease, are often required to prepare their own meals and baked goods to ensure that their foods are "safe." This means avoiding most processed foods and making substitutions to recipes so they can continue to have the foods they enjoy.

At Sunny Valley Wheat Free, we substitute wheat, barley, rye, spelt, kamut and triticale flours with flours ground from white or brown rice, tapioca, corn, amaranth, quinoa, potato, soy, millet and beans. The alternative flours and blends we use have unique characteristics (and are lacking gluten) so they seldom perform in the same manner as wheat flours. Because they also weigh more than wheat flours by volume, the breads are typically more dense and heavier, but still delicious. At Sunny Valley Wheat Free we found that with the right flour combinations, it is possible to obtain optimal results in gluten-free cooking and baking.

We are dedicated to providing quality food products that meet the needs of the growing celiac population as well as children with autism and other conditions who benefit from gluten-free diets. We have modified or upon request are able to modify ingredients in many of our products to make them suitable for GF/CF diets.
